The end of summer (squash)

Okay, so the difference between summer squash and winter squash isn’t that big. The biggest difference is simply the amount of time they spend on the vine.

Summer squash varieties usually only spend between 40 and 60 days on the vine, making their skins more tender. Winter squashes can spend 120 days growing before being harvested. Summer squash is the better choice if you want to enjoy the vegetables (technically, fruits) sliced, chopped, sauteed or grilled.

What species are involved in the shorter, summer category? There are green and yellow zucchini, patty pan squash, crookneck squash and cousa squash (all of which are included in the Cucurbita pepo species).
